A star chef's take on delicious Greek flavors, just like his mother taught him.

Chef Michael Symon

You’ll know Michael Symon from his Iron Chef battles and Emmy-winning turn on The Chew. But you may not know of his deep Greek roots. Chios is inspired by the food he grew up making with his mom and “papou.”

Everyone's favorite savory Greek pastry: two perfectly bronzed triangles of paper-thin phyllo, wrapped around a cheesy, tangy, herby spinach filling.

Spicy Pepper & Feta Dip

Htipiti (roasted red pepper spread) is a blend of tangy feta, rich ricotta, roasted red peppers, and dried chipotles. Topped with feta and marinated olives.

Chicken Souvlaki

Chicken is brined in yogurt overnight, then seared for a tasty char. Served on pita with Little Gem lettuce, tomatoes, grilled onions, and creamy tzatziki.

Crab Keftedes
Sweet jumbo lump crabmeat takes a star turn in these light, crispy fritters, spiced with earthy Aleppo pepper.

Grilled Octopus

Chef Symon's masterful octopus—tender and fragrant with island herbs and served on a flavorful yellow split pea purée—is as good as any we've tasted.
